Rustic Salad with Bell Peppers, Cherry Tomatoes & Chilies
2 small red onions, finely chopped
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
2 serrano chilies, seeded and chopped
3 ribs of celery, or the hearts of celery with leaves, chopped
1 small cucumber (persian or japanese), peeled, halved long ways and sliced
12 or so good size cherry tomatoes, halved or quartered, depending on their size
2 cloves garlic, minced (don’t be afraid, it won’t be overwhelming)
a generous bunch of fresh mint leaves, chopped (about a hand full)
a generous bunch of fresh flat leaf/Italian parsley, chopped (about a hand full)
In a bowl, mix together the chopped onions, peppers, chilies, celery, cucumber, tomatoes, garlic, mint and parsley. Add olive oil and lemon juice, and salt and pepper to taste.
3 or 4 tablespoons good olive oil
freshly squeezed just of 1 lemon
salt and pepper
