Italian Dressing

1/4 cup red wine vinegar
1 tsp. Dijon mustard
1 clove minced garlic
1/2 small minced shallot
2 tsp. sugar
1/2 tsp. dried Italian seasoning/herbs (you can buy it in the spice aisle or make your own with equal parts oregano, parsley, basil, and 1/3 parts of thyme, marjoram)
1/2 tsp. salt
1/2 tsp black pepper
1 tbsp. mayonnaise
1/2 cup olive oil

Combine every thing except the olive oil in a small food processor or blender. While the machine is running slowly drizzle in olive oil until the dressing is combined and emulsified. Adjust the seasoning if necessary. Store the dressing in the refrigerator for up to 2 weeks. Makes 1 cup.
